1 Cup self-raising flour

½ Cup plain flour

good pinch of salt and sugar

1 rounded teaspoon yeast

1 Cup lukewarm water

Tomato paste,

200g ham or diced bacon,

200g mozzarella cheese,

6-8 slices shaved salami,

4 mushrooms, red capsicum sliced,

2 shallots, olives, Italian herbs

Add the flours, salt, sugar and yeast to the pan. Mix half the water at a time in with the flour. Add enough extra warm water to make the mixture spreadable
Spread dough over the base of the pan and top with tomato paste
Add layers of ham or bacon, mozzarella cheese, salami and sliced mushrooms
Top with sliced red capsicum, chopped shallots, sliced olives and a sprinkle of Italian herbs
Cover the pan with the lid with vents open. Set hotplate/gas ring to a medium heat and cook 5 mins to heat pan through, then reduce heat to med-low for 15-20 mins (time and temp settings may vary). You will know when it is cooked by shaking the pan sideways….when it is cooked it will come away from the sides and be loose in the pan.
Remove from heat. Using the egg flip or spatula, lift pizza from pan onto board or serving platter. Cut using pizza wheel, knife or scissors and serve immediately
