8 cups fresh cauliflower florets
1/4 cup Hidden Valley Light Ranch dressing
1 thinly sliced green onion
In a large pot, bring 8 quarts of water to a boil, generously salt, then add cauliflower florets, and cook until very tender, 12-15 minutes. Drain the cauliflower, and place in a bowl. Add the ranch dressing and salt; mash by hand or with a blender until light and fluffy. Sprinkle green onion on top and serve.
