Easy Baked Shrimp Toast

12 slices of quality white bread
1 pound shrimp, peeled and deveined
1 egg, separated
2 garlic cloves, crushed
1 tablespoon peanut oil
1 teaspoon cornstarch
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper
3 scallions, minced
3 tablespoons melted butter, oil or an oil spray pump


Preheat your oven to 250 degrees. Remove the crust from the bread and cut each slice into 4 triangular pieces. Put the triangles on a cookie sheet and bake for 25-30 minutes or until dry but not browned. Remove from the oven and let cool completely. Put the shrimp in a strainer and toss with a generous amount of sea salt. Rinse under plenty of cold water and gently press the shrimp against the strainer wall to drain well. Put the shrimp with the egg white, garlic, oil, cornstarch, sugar, salt and pepper into the bowl of a food processor and process until a coarse paste is formed. Remove and add the scallions. Using a small flexible metal spatula, spread a 1/4-inch layer of shrimp paste on each toast triangle. Make sure that the corners are covered. Preheat the oven to 350 degrees and coat a nonstick (or foil lined) baking sheet with non-stick spray. Place the finished toasts on the baking sheet. Make an egg wash by beating the egg yolk with 1/2 teaspoon water. Brush the tops of the toasts with the egg wash. Bake for 12 to 15 minutes, until the shrimp paste has turned from silver- gray to pink-orange and the toast bottoms are golden brown. Served hot from the oven.
