Steak Quesadillas

Difficulty: Easy - for beginners


6 ounce Prime steak, cut into strips
1 cup chopped red and green bell peppers
1 cup chopped tomatoes
½ cup chopped green onions
1 can (4 ½ oz.) chopped green chilies, undrained
3 cups (12 oz) shredded Monterey Jack Cheese
16 (6 in) flour tortillas
Vegetable Oil cooking spray
½ cup salsa
½ cup Sour Cream


Combine steak, peppers, onions and chilis. Mix well. Spoon 1/3 cup of filling and 1/3 cup of cheese on each of 8 tortillas. Top with another tortilla. Spray nonstick griddle or grill with vegetable oil spray. Heat one at a time until cheese is melted and tortilla is crispy. Keep hot in a warm oven on a cookie sheet. Cut into wedges and serve with salsa and sour cream.
