Pumpkin Zucchini Bread

Difficulty: Easy - for beginners


3 eggs, lightly beaten
2 cups sugar (you can use Splenda)
1 cup canned pumpkin
1 cup applesauce
1 tabelspoon vanilla
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
2 cups shredded zucchini
1 cup chopped walnuts (optional)


Preheat oven to 350 degrees F. In a mixing bowl, combine eggs and sugar. Add pumpkin, applesauce and vanilla. Add baking soda, salt, cinnamon, nutmeg and cloves. Mix until combined. Add zucchini and nuts. Stir in 1 cup at a time 3 cups of all-purpose flour just until mixed. Don't over mix. Pour into two greased loaf pans. Bake for 45-50 minutes or until done. Cool in pans for 10 minutes. Remove to a wire rack to completely cool.
