Yeasted Oatmeal Nut Bread

1 cup uncooked oats
¼ cup brown sugar
1 ½ teaspoons salt
2 cups boiling water
1 package active yeast
¼ cup warm water
2 tablespoons soft butter or shortening
4 ½ - 5 cups flour
½ cup uncooked oats
¾ cups chopped nuts


Measure uncooked 1 cup oats in large mixing bowl. Pour boiling water over and stir. Set aside to cool. Dissolve yeast in ¼ cup warm water. Set aside until yeast is bubbly. Add yeast, butter, brown sugar and salt to oatmeal mixture. Stir in half of flour, Beat until smooth and elastic. Stir in remaining flour until stiff. Turn onto board and knead 10 minutes, adding flour if needed to make non-sticky. Put into lightly oiled bowl. Cover and let rise in warm place until double. Turn onto board and knead in last ½ cup oatmeal and nuts. Divide into two parts. Shape each into loaf. Place in a 9 x 5 x 4 loaf pan which is lightly oiled. Cover and let rise until double. Bake in 375 degrees F oven for 25-30 minutes.
