Oatmeal Muffins

An excellant muffin base and you can add pretty much whatever your heart desires.

2c. all purpose flour
1c. rolled oats (not instant)
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
1c brown sugar
1 tsp cinnamon
1/2 tsp nutmeg
1-1 1/2c milk
2 eggs
1 tsp vanilla
1c grated carrots, mashed bananas, blueberries etc


1) Preheat oven to 350 degrees

2) In mixing bowl, combine all dry ingrediants

3) In seperate bowl, combine all wet ingrediants (except fruit) then add to dry ingrediants. Mix well.

4) Stir in fruit then spoon into lined muffin tins and bake for 30 minutes.

*Makes approx 12-18 muffins
**You could also add 1/2 chopped nuts or chocolate chips
