SPAGHETTI SQUASH WITH MARINARA SAUCE

Ingredients

spaghetti squash
olive oil
salt
pepper
garlic
onions

Method

Cut spaghetti squash in half length wise, scoop out seeds with a spoon
Brush inside of squash w/ olive oil, salt & pepper to taste
Place cut side down on a pan and roast for 30-40
minutes in the oven
When the outside is soft to the touch - scrap inside with a fork for your spaghetti squash noodles



Sauté chopped onions, garlic, peppers, fresh basil and oregano in olive oil until onions are tender
Add freshly diced tomatoes and simmer on low approximately 15 minutes or until desired consistency of
sauce. If you prefer a thicker sauce add a small can of tomato sauce or paste or a little pre-made/store
bought marinara sauce.
