1 pkg (8 oz) cream cheese, softened
1/3 c powder sugar
3 Tbs cornstarch
1 whole egg, separated
3 Tbs sugar
1 tsp vanilla extract
1/4 tsp almond extract
1 refrigerated pie crust
2 c fruit (may use peeled peaches, peeled apricots, and/or mixed berries)
Put oven rack in lowest position. Preheat oven to 400.
Mix together cream cheese, powder sugar, 2 Tbs cornstarch, and egg yolk.
In a separate bowl, mix together fruit, 2 Tbs sugar, 1 Tbs cornstarch, and extract.
Unfurl the dough on a lightly floured surface and roll to the size of a large dinner plate. Transfer dough to a cookie sheet or pizza pan.
Spread cream cheese mixture evenly over dough, leaving a 2" border. Scatter the fruit mixture evenly over the cream cheese mixture.
Fold the pastry edges up to just cover the outer edge of the fruit/cream cheese. Brush the edges with egg white and sprinkle with sugar.
Bake until golden brown and bubbly (about 30 minutes).
Slide onto a wire rack to cool.
Slice like a pizza and serve warm.
