Quick Beer Bread

This quick and easy beer bread pairs wonderfully with stew or a hearty soup! Add some good quality beer or ale to your main dish to create the perfect pair :)

Ingredients

2 1/4 cups all-purpose flour
5 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
12 ounces lager beer (nothing too dark)
2 tablespoons olive oil

Method

This recipe is adapted from Robin Miller's "Quick Fix Beer Bread". I increased the amount of salt and sugar, so that the flavors are enhanced. When choosing your beer, don't use a one that is too heavy - something like Blue Moon or Sam Adams works best!

Directions:
Preheat oven to 400 degrees F. Coat an 8-inch loaf pan with cooking spray.

In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Make a well in the center. Pour in beer and olive oil and mix until just blended. Pour batter into prepared loaf pan and bake 45 minutes, until golden brown. If bread is browning too fast, cover with tin foil.
