Meatless Lasagna

Ingredients

2 T. olive oil
2 C. mushrooms
2 C. tomatoes
1/2 C. water
1/4 tsp. pepper
1 Bay Leaf
2 C. Ricotta or 2% cottage cheese
1/2 C. Parmesan cheese
1 C. onion chopped
1 tsp minced garlic
12 oz tomato paste
1 tsp ground oregano
1 tsp crushed basil leaves
8 oz lasagna noodles
4 C mozzarella cheese

Method

Saute onions, mushrooms, and garlic in oil. Add tomatoes, tomato paste and water. Stir in seasonings and simmer for 25 - 30 minutes. Remove bay leaf. Cook noodles. Use 9x13 baking pan. Layer 1/3 of the noodles on bottom, then add 1/3 of the sauce, then 1/3 of the ricotta, parmesan, mozzerella cheese. Continue layering until pan is filled. Bake at 350 degrees uncovered for 30 to 40 minutes.
