Difficulty: Easy - for beginners
2 c frozen corn, roasted
3 Tbs olive oil
1 c onion, minced
1/2 c yellow pepper, seeded and diced
1/2 c red pepper, seeded and diced
1 Tbs garlic, minced
1/4 c green onions, sliced
1 c mayonaise
1/2 lb pepperjack cheese, shredded
Saute corn, salt, and pepper in olive oil.
In another skillet, saute onion and peppers in 1 Tbs butter until onions become translucent. Add garlic and cook an additional 2 minutes.
In a large bowl, combine corn and onion mixture. Add mayonaise and shredded cheese. Stir and place mixture into an oven-proof baking dish.
Sprinkle the top with chopped green onions.
Bake at 400 for 15 minutes.
Serve with pita wedges, tortilla chips, or crackers.
