Sweet Potato Souffle

Ingredients

Potato Mixture
2 lbs sweet potatoes, scrubbed
1/4 c butter, melted
3/4 c sugar
3/4 c brown sugar
1/2 tsp salt
1 tsp vanilla
1 tsp ground cinnamon
3 eggs
1/3 c milk

Topping
1/2 c brown sugar
1/2 c pecans, chopped
1/3 c flour
1/3c butter, melted

Method

Preheat oven to 350.

Butter a 2 qt baking dish and set aside.

In a lg saucepan, boil potatoes in enough water to cover them until potatoes are tender. Drain and cool slightly. Peel and quarter potatoes.

In a lg bowl, combine sweet potatoes, butter, sugars, salt, vanilla, cinnamon, eggs, and milk. Beat to combine. Pour into baking dish.

Tomake topping, combine brown sugar, pecans, flour, and butter in a small bowl. Mix until crumbly.

Sprinkle topping over potatoe mixture. Bake at 350 for 35-40 minutes.
