Lobster Newberg

Difficulty: Easy - for beginners


1 Lb lobster
2 egg yolks, slightly beaten
1/2 c heavy cream
1/4 c butter
2 tsp cooking sherry
1/2 tsp salt
2 slices cheese


Break cooked lobster into chunks.

Combine egg yolks with heavy cream.

Melt butter in a saucepan over low heat. Stir in egg mixture and sherry, stirring constantly until thickened.

Fold in cheese and lobster.

Serve over rice or pasta.
