Shephard's Pie

Difficulty: Easy - for beginners


2 lb potatoes, peeled and cut into chunks
1/4 c sour cream
1 Tbs butter
1/2 tsp salt
2 tsp olive oil
1 lg onion, peeled and chopped
1 c chopped carrots
1/2 c chopped celery
1 lb lean ground beef, sirloin, or turkey
3 Tbs flour
1 Tbs fresh rosemary, chopped
2 c beef broth


Preheat oven to 400.

Put potatoes in a lg pot of boiling water and cook until tender.

Meanwhile, heat oil in a skillet and saute onions, carrots, and celery. Cook until onions become translucent. Add ground meat and cook while stirring to break up meat.

Once meat is cooked, stir in flour and rosemary. Mix to coat. Add broth and bring to a slow simmer until mixture thickens.

Mash together potatoes, cream, butter, and salt.

Spoon meat mixture into an oven-safe baking dish. Spread potato mixture over the top of the meat mixture.

Bake for 30 minutes.

To serve, cut into squares and serve.
