Difficulty: Easy - for beginners
2 large eggs, beaten
¼ cup milk
4 thick slices French bread (1½ to 2 inches thick
4 slices Swiss cheese (about 3 to 4 oz)
4 thin slices ham
1 to 2 tablespoons butter
Whisk eggs and milk in a bowl; pour into a shallow dish and set aside. Cut a 3-inch slit in one side of each slice of bread to form a pocket. Do not cut all the way through. Fold each piece of cheese in half and stuff into the bread pocket. Trim the ham slices and stuff into each pocket. Dip sandwiches in egg mixture, turning to coat both sides. Melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add 2 pieces of your stuffed French toast and fry until golden, 2 or 3 minutes per side.Repeat with the other 2 pieces, adding more butter if necessary. Serve with confectionerâ€™s sugar and maple syrup for a brunch dish or with a simple salad for lunch.
