Difficulty: Easy - for beginners
1 cup shredded cheddar cheese
1 cup shredded swiss cheese
4 TBS sour cream
2 green onions (chives)
Preheat oven to 400 degrees. Lightly fry potatoes with vegetable oil. Layer potatoes on bottom of small casserole pan or skillet that can go in the oven. Sprinkle some cheddar and swiss cheese on top of potatoes. Spread sour cream as next layer and sprinkle with chopped chives. Lightly scramble the eggs (leave runny) and add as next layer. Sprinkle more cheddar and swiss cheese on top. Bake for about 15 minutes.
