Fresh pumpkin, cubed
coriander and/or chili enough to season the pumpkin
Fresh green beans or haricot verts
Red onion, sliced
- Sprinkle crush coriander seeds/chilli seeds and olive oil on cubed pumpkin and roast in 200oC oven for 20-25 mins.
- Cook beans in water over stove for 5 mins
- Roast pine nuts in pan until golden
- Cook sliced red onion in buttered/EEVO'd pan until limp
