Apple Cake

Generously rippled with apple slices and cinnamon and drizzled with powdered sugar icing. This luscious cake is especially welcome for breakfast or brunch on crisp autumn mornings.

1/4 c gran. sugar
2 TB all purpose flour
1 1/2 tsp ground cinnamon
5 cups sliced peeled cooking apples
2 1/2 cups all purpose flour
1 1/2 granulated sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1 cup vegetable oil
4 eggs
1/4 cup orange juice
2 tsp vanilla

Powdered sugar icing: 1 cup sifted powdered sugar, 1 TB milk, 1/4 tsp vanilla. Stir additional milk if necessary , till icing is of drizzling consistency.


Grease & lightly flour 10 inch fluted tube pan. In a large mixing bowl combine, 1/4 cup sugar, 2TB flour & cinnamon. Add apples, toss to coat. Set aside.

In a large mixing bowl, combine 2 1/2 cups flour, 1 1/2 cups sugar, baking, powder, baking soda. Add oil, eggs, orange juice, & vanilla, beat with an electric mixer on low to med. speed about 30 seconds. Beat on med. speed 2 min. Pour 1/3 of the batter (about 1.5 cups) into prepared pan. Top with half of the apple mixture. Spoon another 1/3 of the batter over the apples in pan top with remaining apples. Spoon remaining batter over apples.

Bake in 350 oven about 1 hr 15 min or until a toothpick inserted comes out clean. Cool in pan on wire rack for 15 minutes. Remove from pan. Cool completely on a wire rack. Drizzle with powdered sugar icing. Let cake stand for 1-2 hours before slicing.
