Difficulty: Easy - for beginners
2 tbsp plain green yogurt
3 tbsps almond slivers
1/4 cup dried cranberries
1/3 cup chopped red onion
3 tbsps light mayonnaise or salad dressing
1/4 lemon yields lemon juice
1/4 tsp shredded lemon peel
4 cups chopped broccoli
1/4 tsp fresh grated ginger
In a large bowl, stir together mayonnaise, yogurt, lemon peel, lemon juice and ginger.
Add broccoli, red onion and cranberries. Toss to coat.
Cover and chill for 1 to 24 hours. Just before serving, sprinkle with almond slivers.
