Thai Pasta Salad

1 lb thick rice noodles
2 limes, squeezed
2tbs apple cider vinegar
1/4 cup peanut oil
1/2 cup unsalted peanuts, chopped
4tbs Thai chili garlic sauce
1 bunch of fresh basil, chopped
1 bunch of green onions, chopped
1 cup of baby carrots, thinly sliced
kosher salt and fresh ground pepper to taste

(all measurements are estimates)


Cook the pasta as directed, rinse with cold water, drain and set aside. In a small container prepare the dressing by mixing peanut oil, lime juice, vinegar, chili sauce, and peanuts. Thoroughly toss dressing and remaining ingredients into cooled pasta. Top with a sprinkling of whole peanuts and a couple whole basil leaves. Refrigerate until ready to serve.
