Difficulty: Easy - for beginners
Serves: 6 - 8
2 lb frozen chopped spinach, thawed and drained
1 stick butter
4 cloves garlic, minced
4 shallots, chopped small
4 Tbs flour
2 c heavy cream
salt and pepper to taste
Melt butter in a large suacepan or skillet over med-high heat.
Add garlic and shallots. Saute, stirring occaisionally until translucent.
Sprinkle in flour and stir well. When mixture is pasty, reduce heat to medium and whisk in cream.
When sauce thickens, fold in spinach and heat through.
