Crawfish Fritters

Also known as Crawfish Beignets, these fritters go great with a spicy mayo dipping sauce

Preparation time: 20 minutes
Cooking time: 10 minutes

Difficulty: Easy - for beginners
Serves: 6-8


2 lb peeled crawfish
1/2 cup yellow onion, diced
1/2 cup bell pepper, diced
1/2 cup celery, diced
1/4 cup shredded cheddar cheese
2 cloves garlic, diced
1 tbsp butter
2 eggs
salt and pepper, to taste
cayenne pepper, to taste
veg oil for frying


Put crawfish in food processor and chop (leave some texture)

Saute onion, celery, and bell pepper in butter, until tender.

Add vegetable blend & rest of ingredients to crawfish mixture.

Season with salt, pepper and cayenne

Form into small balls and deep fry at 350 degrees until golden brown
