Capresi Salad with Walnut Oil

Fresh and simple, this capresi salad combines heirloom tomatoes, basil, mozzarella and the delicious earthy flavor of Limerock Orchards roasted walnut oil. Serve with some warm, crusty bread and a glass of Sauvignon Blanc or Chardonnay.

- Salad -
3 heirloom tomatoes
1 pound fresh mozzarella cheese
1 bunch fresh basil
Limerock Orchards roasted walnut oil
Salt and pepper

- Balsamic Reduction -
1 c. balsamic vinegar
1 T. brown sugar
2 T. butter
Salt and pepper


For the balsamic reduction, add vinegar and brown sugar to a small pot over medium-low heat, whisking to combine. Reduce until syrupy. Whisk in butter and season to taste with salt and pepper.

For the salad, cut tomatoes and mozzarella into 1/4-inch slices. Alternately layer tomato slices and mozzarella slices on a large platter, adding a basil leaf between each. Drizzle with walnut oil and balsamic reduction. Season to taste with salt and pepper.
