1/2 cup water
1 red onion -- sliced
1 red chili pepper -- deseeded and chopped
12 1/2 ounces Red apples -- peeled, cored and chopped
2 tbsp apple balsamic or apple cider vinegar
3 tbsp light soft brown sugar
3 tbsp raw cranberry relish
8 slices walnut bread -- toasted (optional)
4 1/4 ounces chevre cheese -- sliced into thin rounds (optional)
1.Heat the water in a nonstick skillet and saute the onion and chilli for 8-10 mins until softened.
2.Add the apples, vinegar, cranberry relish and sugar. Season then cook for 8-10 mins until soft and most of the liquid has evaporated. Cool. This relish can be stored for up to a week.
3.Divide the apple and onion mixture among the toasted bread then top with the goat’s cheese. Grill for 3-5 mins until the cheese begins to melt.
