Sharon's Four Day Coconut Cake

Ingredients

1 BOX WHITE CAKE MIX
2 CUPS SOUR CREAM
2 CUPS SUGAR
14 OZ. COCONUT
1 1/2 CUPS COOL WHIP

Method

Make a 3 layer cake from a box of white cake mix following the directions on the box.

Then mix up a filling/icing of:
2 CUPS SOUR CREAM
2 CUPS SUGAR
14 OZ. COCONUT

Set aside 1-1/4 cups of this and spread the rest between the layers.

Add 1-1/2 cups of Cool Whip to the reserved mixture and use this to ice the cake. Then cover the cake with plastic wrap or a cake cover and refrigerate it for 4 days.
