1 cup white rice, washed and drained; 2 tbsp margarine or olive oil; 1 chopped onion; 2 cups boiling water; 1 tbsp chicken soup powder; 1/2 cup raisins; 1/2 cup slivered almonds; 1 tbsp oil.
FRY the onion in margarine, stirring occasionally for about 7-10 minutes, until soft and golden. ADD rice and fry for 5 minutes, stirring constantly, until the rice begins to brown. ADD boiling water and soup powder, cover and cook on a very low heat for close to 10 minutes. ADD raisins and cook for another 7-10 minutes until rice is soft and most of the water has been bsorbed. Cover and let stand for 10 minutes. FRY almonds in oil until light brown and add to the rice. Mix and serve hot.
VARIATION: Instead of raisins, add 1/2 cup chopped dill and leave out almonds. Turn off heat and let stand for 1/2 hour.
