Difficulty: Easy - for beginners
3 TBS organic butter
1/2 cup + 1 TBS frozen apple juice concentrate
2/3 cup dates
1 TSP pure vanilla extract
2/3 cup whole wheat flour
1 1/2 TBS baking powder
1/4 cup unsweetened cocoa powder, or carob powder
1/2 cup of walnuts
Combine organic butter, apple juice concentrate, and dates in a small saucepan, on low heat for 10 minutes. Then, remove from heat.
Add 1 TSP of pure vanilla extract.
Process in a blender until creamy and set aside
Mix whole wheat flour, baking powder, unsweetened cocoa powder (or carob powder), and walnuts together in a medium bowl.
Add the date mixture and blend quickly, but thoroughly.
Pour into a greased, 8 inch square pan.
Bake at 350 for about 10 minutes.
Let cool in the pan and cut into squares.
