Difficulty: Easy - for beginners
1 1/6 cup sugar
2 cups flour
1/4 tsp salt
3/4 tsp baking powder
2 sticks butter
1 oz bottle lemon extract
1/2 lb candied cherries - cut up small
1/2 lb. candied pineapple - cut up small
2 cups pecans
Cream butter and sugar together then add one egg at a time until smooth. Add lemon extract and stir in.
In another bowl put flour, baking powder and salt and blend. Stir in the pineapple, cherries, and nuts. Add the butter mixture in and stir in by hand until mixed well.
Spray pans with pam, fill pans about 3/4 full.
Bake at 300 for 1 hour and 30 min
