16 large pitted dates
2 oz mild Feta cheese (optional)
32 salted skinless almonds (I used Planters with Sea Salt & Olive Oil)
6-8 slices thin sliced bacon (I used maple flavored)
Partially cook bacon to remove some grease but do not crisp. Drain on paper towels.
Preheat oven to 425 degrees.
Cut slit in long side of each date, being careful not to cut completely through. Cut cheese (if using) into 16 sticks. Stuff each date with cheese and 2 nuts.
Cut bacon into thirds or halves.
Cut bacon into half or thirds and wrap around each date, completely enclosing cheese. Secure with toothpick.
Place on rack of broiler pan. Bake at 375 for 12-14 min or until bacon is crisp, turning after 6 min. Cool on paper towels 5 min; transfer to serving plate. Serve warm or at room temp.
