Macaroni and Cauliflower Soup

Quick to make, loaded with nutrition through the cauliflower. A warm soup-like dish...great on a chilly night! My mother and grandmother both made this dish over the years. With a crunchy bread on the side it is fabulous! Cheap, too!

Ingredients

1 head of cauliflower, trimmed and cut up
3/4 to 1 pound of spaghetti, broken into smaller pieces about 2 inches
salt, pepper, olive oil

Method

boil a out 2 quarts of salted water to cook both cauliflower and pasta

When water is boiling add the cauliflower and cook for about 5 min. Add broken pasta to the pot and cook until done (about 8 minutes). Serve hot with a sprinkle of pepper and a drizzle of olive oil.

Note: also good with a bit of grated cheese on top
