Gluten Free Meatballs

Some meatballs are made with gluten... these aren't. Italian-y and tasty!

Ingredients

1/2 pound Ground Beef
1/2 pound Ground Pork
1/3 cup Potato Flakes (instant mashed potatoes)
1/4 cup milk (or water)
1TB Soy Sauce (Gluten Free)
1 tsp Garlic Salt
1/8 tsp Pepper
1 egg
Italian Seasonings to taste

Method

Preheat Over to 400 Degrees.

1) Mix ground meats with hands or with standing mixer (do not over mix! Be gentle)
2) Add in all other ingredients, mix to blend (do not over do it people, unless you like to chew on hockey pucks, in which case go to town).
3) Form into ping pong ball sized meat balls on a cookie sheet.
4) Bake in 400 Degree oven for 15 minutes. Cut one meatball open to check to make sure cooking is complete. If it is complete... eat that one. Yay!

I usually make this recipe times five! It makes about 125 meatballs with 5 pounds of meat. So you should get about 24 meatballs depending on how large you make them. Put in freezer bag to freeze and reheat!
