Difficulty: Easy - for beginners
1 c chicken broth
1 tsp grated lemon peel
1 Tbs freshlemon juice
1 Tbs chopped fresh oregano
2 tsp cornstarch
1 clove garlic, mined
1 lb boneless pork tenderloin, cut into bite-size cubes
2 tsp olive oil
Combine broth, lemon peel, lemon juice, oregano, cornstarch, and garlic. Mix well and set aside.
Season pork lightly with salt and pepper.
In a large, nonstick skillet, heat oil over medium-high heat. Cook pork for 1-2 minutes each side or until browned. Transfer cooked pork to a platter.
Reduce heat to medium. Stir broth mixture and add into skillet. Cook, stirring 1 minute. Return pork and juices to skillet and cook an additional 2-3 minutes.
Serve over rice, pasta, or mashed potatoes.
Alternatetively, use sauce as a marinade. Place pork on skewers and barbeque over charcoal.
