4 c frozen hash browns
4 c cauliflower florets
2 c shredded cheddar cheese
2 c chopped onion
1/4 c diced red bell pepper
1 1/2 c ranch dressing
1/4 c ranch dressing
1/2 c sour cream
1/2 c plain dry bread crumbs
Mix together hash browns, cauliflower, 1 c cheese, onion, and bell pepper in a large mixing bowl.
In a separate bowl, whisk together 1 1/2 c dressing and sour cream. Pour over potato mixture and mix well. Transfer potato mixture to a 2 qt baking dish.
Mix together remaining 1 c cheese,1/4 c dressing, and bread crumbs. Sprinkle on top of casserole.
Bake at 350 for 60 minutes, until browned and bubbly and cauliflower is tender.
Let stand for 10 minutes before serving.
