Fruit Cake

Difficulty: Easy - for beginners


1 cup sugar
1 cup butter
5 eggs
1 ¾ cups all-purpose flour
½ teaspoon baking powder
1 pound red or green glazed cherries
1 pound glazed pineapple
4 cups chopped pecans
½ tablespoon vanilla
½ tablespoon lemon extract
additional fruits and nuts for tops


Cream sugar and butter until light. Add the eggs, one at a time, beating after each until creamy. Sift half of the flour with the fruits and nuts before adding baking powder, then add butter and sugar mixture. Mix by hand, adding remaining flour. Spoon into lined tube pan. Bake at 2500 for 3 hours starting in a cold oven. Cool in pan. If you want a fruit-nut topping, after cake has baked 2 ½ hours remove from oven, arrange fruit on top to your liking and return to oven; bake for about ¾ additional hour or until well done
