Golden Spice Cake

2 cups all-purpose flour
1 ½ cups sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
½ teaspoon nutmeg
7 large eggs, separated
¾ cup canned pumpkin
½ cup salad oil
½ cup water
1.2 teaspoon cream of tartar


Stir dry ingredients together in a mixing bowl. Separate eggs; set whites aside. In a small bowl, combine yolks with pumpkin, salad oil and water. Make a well in the center of dry ingredients. Add liquid all at once and blend until smooth. Beat whites until foamy and add cream of tartar. Beat until stiff but not dry. Fold into pumpkin batter. Turn into ungreased 10” tube pan and bake at 325 degrees F for 55 minutes. Raise temperature to 350 degrees F and bake for 15 minutes longer.
