Ancho - roasted sweet potatoes

3 medium to large sweet potatoes, peeled and chopped into bite-sized pieces
1 T ancho chili powder
pinch of garlic
olive oil


Toss potatoes with a couple of tablespoons of olive oil to coat. Add ancho chili powder, garlic and salt & pepper to taste. Spread in a single layer on a baking sheet and bake for 20 minutes at 400* or until edges are starting to brown.
