Vegetarian Chili

Based on a recipe I found online, with years of personal modifications. It's a fair amount of work, but simple enough to do.

Ingredients

3/4 c bulgur wheat
1 tsp chili garlic sauce
1 tsp chili sauce for chicken (optional)

Spices:
5 Tb chili powder
1 tsp cumin
1 tsp coriander
1 tsp basil
1/2 tsp oregano
1 tsp salt
1 tsp cocoa
1 tsp crushed pepper flakes OR 1 diced hot pepper
3 Tb brown sugar
1 garlic bulb, peeled and crushed

Veggies:
1 onion, diced
2 carrots, diced
3 stalks celery, diced
1 bell pepper
1/2 c frozen corn

2 cans mixed beans, drained and rinsed
1 can diced or pureed tomatoes

Method

1. In small pot, boil 1 cup of water
2. Turn off heat, add bulgur wheat, chili sauces
3. In large pot, sweat onions in oil, medium-high
4. Add all remaining veggies, sautee several minutes
5. Add all spices, sautee until everything is coated
6. Add beans, then bulgur wheat mixture, then tomatoes
7. Add water until everything is covered. Error on the side of too watery
7. Stir until boiling, then lower heat to just barely simmer, stirring the whole time
8. Cover, let cook at least 3 hours, stirring occassionally
