Acorn Squash Soup

Based heavily on an online recipe, but modified to my taste

Difficulty: Easy - for beginners


1 onion, diced
1/2 c celery, chopped
2 Tb margarine
2 Tb flour
1 tsp chicken bouillon powder
1/2 tsp dill weed
1/4 tsp curry powder
2 c chicken broth
12 oz milk
1 medium acorn squash
salt and pepper
1/4 c 10% cream


1. Wash, pierce squash with knife in several spots
2. Microwave for 10 minutes
3. Bisect lengthwise
4. Scoop out, discard seeds and strings
5. Scoop out, mash flesh

1. Melt margarine in pot
2. Saute onions, celery
3. Stir in flour, bouillon, dill weed, curry powder
4. Add broth, milk
5. Bring to boil, continuing to stir
6. Add mashed squash
7. Dash of salt and pepper
8. Boil 5 minutes
9. Blend with hand blender until creamy consistency
10. Add cream
11. Season to taste
