Pressure Cooker Potato Broccoli Cheese Soup Recipe (Wolfgang Puck Bistro PC)

Super quick, very filling

Ingredients

4 cups chopped broccoli florets
4 potatoes (peeled and cut into 1 inch cubes 2 12 lbs)
1 onions (chopped)
2 tsps salt
1 1/2 cups water
1 cup milk
1/4 tsp pepper
3 cups cheddar cheese (grated)

Method

Put potatoes, broccoli,onions, salt and water in cooker
Close cooker.
Set on Vegetable setting.
Cook for 5 minutes.
Allow to cool naturally, till there is no pressure inside cooker Open cooker.
Mix 3/4 of the mixture smooth in a blender or mash it through a sieve.
Return soup to cooker.
Add milk and pepper.
Place cooker on Soup setting and bring to boil, stirring constantly.
Add cheese and stir till cheese melts.
Serve immediately or turn to Keep Warm setting
