Edamame Salad

Very fresh and spring like. Thanks to Go-Go Donna Scott for sharing this with us. We are pairing it with Garbanzo Burgers!

1 bag (16 oz) frozen and shelled edamame, 1/4 c vinegar, 1 T canola oil, 1/4 tsp salt, 1/8 tsp ground black pepper, 1 bunch radishes (8 oz) cut in half and thinly sliced, 1 c loosley packed chopped fresh cilantro leaves.


Toss the adamame, vinegar, oil, salt, pepper, radishes and cilantro together in a large bowl. Serve chilled or at room temperature.
