Chinese-style Tapioca Pudding

Thick tapioca desert with an orange flavor, great after spicy meals

6 cups water
2 mandarin oranges, juiced
1/2 tsp salt
3/4 cup tapioca, small pearls
3/4 cup sugar
1 tsp Orange extract

1 tbsp Grand Marnier liquor (optional)
Orange food coloring, or 1 drop red and 2 drops yellow (optional)

Cream or milk to taste


1. In a medium saucepan, bring the water, mandarin juice, and salt to a boil.
2. Add the tapioca and stir. Cover the pan with a lid, reduce heat to medium-low, and stirring occasionally, simmer for 20 to 30 minutes, or until almost all the tapioca pearls turn translucent. The pudding should be thick.
3. Add the sugar, orange extract, optionally the food coloring, and stir until the sugar is completely dissolved.
4. Serve chilled with either cream or milk on the side.
