Vegetable Soup

2 cloves garlic, minced
2 carrots, diced
1 zucchini, diced
1 yellow squash, diced
2 c chinese cabbage, chopped
2 c swiss chard, chopped
1 head cauliflower, chopped
1 stalk broccoli, chopped
1 onion, diced
1 sweet bell pepper (red, yellow, or orange), seeded and diced
3 stalks celery. diced
2 tsp fresh thyme, chopped
1 bay leaf, whole (to be removed before serving)
2 Tbs fresh parsley, chopped
salt and pepper to taste
6 c chicken broth or vegetable stock


In a large pot or crock pot, heat together all ingredients until vegetables are tender.
