Spinach and Steak Salad with Chipotle Honey Mustard

8 oz boneless beef top loin steak
Chipotle honey Mustard Dressing (recipe below)
4 cups Imperial County grown spinach
1/2 cup sliced Imperial County grown cucumber
1/4 cup sliced Imperial County grown red onions
1/4 cup diced red bell peppers
1/4 cup crumbled feta cheese
1/4 cup canned prepared fried onions (optional)


Dressing: Whisk together
1/4 cum light mayonnaise
3 tbs water
2 tbs whole grain mustard
2 tbs Dijon mustard
2 tbs honey
1/2 tsp chipotle chile powder

brush steak with 1 tbs chipotle honey dressing
grill or broil steak
let stand 5 minutes before cutting to slices
divide spinach, cucumber, red onion and red pepper on two large plates
arrange sliced steak on top of each
drizzle with dressing to taste
sprinkle with feta cheese and onions
