I used this recipe in a cake so no crust, you can easily find a recipe for a crust and make this the filling. It was so good, my first all homemade cheesecake so I am keeping the recipe for future use.

Difficulty: Easy - for beginners


20 ounces cream cheese, room temperature
1 cup sugar
1 tsp vanilla extract
3 large eggs
1/2 cup sour cream


Preheat oven to 425. Using an electric mixer beat the cream cheese on medium until fluffy, scraping down sides of bowl. Gradually add sugar, beating until fluffy. Beat in vanilla extract. Beat in eggs one at a time, scraping down sides of bowl after each addition. Beat in sour cream.

Put a piece of parchment paper on the bottom of a springform pan, spray with nonstick spray. Pour the filling in the pan and bake for 15 minutes. Turn oven temp down to 325 degrees and bake for an additional 45 min.

Remove pan from oven and let cool 20 minutes. Run a knife around edges of the pan to loosen from the sides. Let cool completely. Cover with plastic wrap and freeze until ready to use.
