Difficulty: Easy - for beginners
3 large potatoes, peeled and cut into 1-inch pieces
1 medium onion, chopped
3 Tablespoons grated Parmesan cheese
1 Tablespoon minced chives, I used dried
1/2 teaspoon season salt
1/4 tsp pepper
2 Tablespoons butter
1/2 cup crumbled bacon
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
In large bowl combine first six ingredients. Transfer to foil packets (it takes two nice size ones). Dot with butter. Fold the foil packets and seal tightly. Cook on the grill 18-20 minutes or until the potatoes are tender, Mike puts on the seam side first and then flips over to the back so he can open for the other ingredients or to check the potatoes).
I mix the bacon and other 2 cheeses together so all Mike has to do is put in the packets.
Carefully open foil and add the bacon/cheeses, grill an additional 3-6 minutes oro until the cheese is melted.
