Chocolate Lava with Love Cupcakes

Ingredients

1 box devil's food cake mix
1 cup milk
1/2 cup oil
3 eggs
1 package chocolate fudge pudding pie mix (dry, do not make)
8oz bittersweet chocolate squares
3/4 cup heavy whipping cream
3 sticks unsalted butter, room temperature
3 cups sifted confectioner's sugar
1/2 cup unsweetened dark cocoa
1 tsp pure vanilla extract
2 tbsp chocolate syrup

Method

In a small saucepan, heat 3/4 cups heavy whipping cream. Chop 8oz chocolate into course pieces and place in heat proof bowl. Allow whipping cream to just come to a boil, and then pour over chocolate pieces. Let stand for 1 minute. Then mix with spatula until smooth and all pieces are melted (can place in microwave for 20 seconds if there are still some big pieces). Place in refrigerator for 1 hour

Heat oven to 350F

Line 24 cupcake tins with liners

Mix cake mix, milk, oil, eggs and pudding mix in mixer until combined

Fill liners and place one tablespoon of chilled chocolate ganache on top of the cake batter in each cupcake liner and bake for 20 - 23 minutes

While cupcakes are baking, in a mixer, cream the 3 sticks butter

Add confectioner's sugar 1/4 cup at a time until completely incorporated with butter, add cocoa and mix well, then add vanilla and chocolate syrup.

Pipe or frost onto slightly cooled cupcakes - don't wait too long or the lava will cool and won't be melty anymore.

Enjoy! Best to use a spoon :) Cupcakes are also equally awesome once they cool :) They become chocolate ganache filled cupcakes :)
