Pan Fried Fish Fillets

The best fish we've ever had - southern fried and yummy!

1 1/2 lb fresh fish fillets
Louisiana Hot Sauce
Vegetable Oil
1/2 tsp. salt
1/8 tsp. pepper
1 c. corn meal


Lightly coat / sprinkle fillets with hot sauce and place in fridge for 30 minutes. I use about 2-3 drops per side and rub it in. It takes the fishy taste away but the heat cooks off. Heat 1/4 in. oil in heavy skillet over medium heat. Mix cornmeal, salt, and pepper in shallow dish. Dip each fillet into cornmeal mixture and press both sides until well coated. Fry fish about 8 minutes or until fish flakes and is golden brown, turning once. Drain on paper towels. Enjoy!
