Yummy Lemon Cake

125g Butter (room temp)
1 cup castor sugar
juice and rind of 1 large Lemon
2 eggs
1 cup s/raising flour
1/2 cup sour cream
icing sugar to dust


Cream butter until light and fluffy. Gradually add sugar and beat until pale. Mix in rind and add eggs, beating between additions. Fold in flour alternatively with sour cream and juice. Pour into greased and lined 20cm round cake tin. Bake at 160 C for 30-40 mins. Leave for 5 minutes before turning out of tin. Dust with icing sugar when cool. Serve with double cream. ENJOY!! :)
