Almond Flour Chocolate Chip Cookies

Ingredients

1 1/2 cup Almond Flour
1/4 cup butter or margarine
1/4 cup sugar or splenda
1 egg
1/4 teaspoon salt
1/2 teaspoon vanilla
1/4 teaspoon baking soda
1/4 cup chocolate chips

Method

Mix all ingredients together except for flour and chocolate chip. Batter should be smooth and creamy. Add 1 cup of flour at a time while mixing. After all flour is mixed in well, then add the choclate chips and fold in by hand.

Coat your cookie sheet with olive oil cooking spray. Almond flour sets up differently than white flour. So you'll want to roll the dough into 2" balls then flatten on your cookie sheet. Space a couple inches apart.

Bake at 375F for 15 minutes. Almond flour doesn't brown as easily as white flour so don't be mislead by its looks. Let cookies cool before putting in a container. Recipe makes 1 dozen.
